A previously unpublished manuscript of more than 60 culinary recipes, from a miscellany containing medical, botanical, household and personal advice compiled in northeastern France in the middle of the 15th century. Scully includes a transcription of the original text, his translation, and critical notes on language and culinary technique. The manuscript contains some unusual recipes including the only pasta recipe found outside Italian sources during this period (for vermicelli), and a chicken that “sings” at the table. 150 pages.
